North Texans love their Tex-Mex. By incorporating left-over turkey with cheese, sour cream, and other sauces, you can work your way through leftovers while satisfying all your Tex-Mex needs. In addition to enchiladas, turkey quesadillas make a great game day snack as your curl up on the couch to cheer for the Cowboys!
Everyone’s heard of chicken and waffles—so why not recreate it with turkey? Consider adding leftover stuffing to the waffle mix to bring out the traditional Thanksgiving flavors. After taking the waffle out of the iron, top it with sliced turkey and cranberry sauce. This sweet-and-salty breakfast dish will be a hit with all your overnight guests.
Fried Stuffing Balls
If you want to bring back memories of the state fair, then fry up these stuffing balls as an anytime-snack. Dredge leftover stuffing in a mix of eggs and milk. Put the fully-coated pieces of stuffing into frying pan of hot oil. Cook each cube for about four minutes or until golden brown. Use excess cranberry sauce as a dip.
